Ingredients:

1 kg boneless chicken skin removed

Juice of 1 lime

Salt to taste

1 tsp red chilli powder (adjust to suit your taste)

6 cloves

8-10 peppercorns

1″ stick of cinnamon

2 bay leaves

8-10 almonds

Seeds from 3-4 pods of cardamom

1 cup fresh yoghurt (must not be sour)

3 tbsps vegetable/canola/sunflower cooking oil

2 onions chopped

2 tsps garlic paste

1 tsp ginger paste

2 tsps coriander powder

1 tsp cumin powder

1/4 tsp turmeric powder

1 can (400g or 14 oz) of tomato paste

1/2 litre chicken stock

2 tbsps kasuri methi (dried fenugreek leaves)

3 tbsps unmelted, soft butter

Salt to taste

Coriander leaves to garnish

Preparation:

Mix the chicken, lime juice, salt and red chilli powder in a large, non-metallic bowl. Cover and allow to marinate for 1 hour.

Heat a flat pan or griddle on medium heat and gently roast (stirring frequently) the cloves, peppercorns, cinnamon, bay leaves and almonds till they darken slightly. Cool and add the cardamom seeds. Now grind into a coarse powder in a clean, dry coffee grinder.

Mix the yoghurt, above whole spice powder (from previous step), coriander, cumin and turmeric powders together and add them to the chicken. Allow to marinate for another hour.

Heat the oil in a deep pan on medium heat. When hot, add the onions. Fry till a pale golden brown in color and then add the ginger and garlic pastes. Fry for a minute.

Add only the chicken from the chicken-spice mix and fry till sealed (chicken will turn opaque and the flesh will go from pink to whitish in color).

Now add the tomato paste, chicken stock, kasuri methi and remaining part of the yogurt-spice mix to the chicken.

Cook till the chicken is tender and the gravy is reduced to half its original volume.

Melt the butter in another small pan and then pour it over the chicken.

Garnish with coriander leaves and serve with Naan and Kaali Daal.

For an authentic and traditional cooked-over-the-coals flavour: When the Butter Chicken is cooked, make a small bowl shape with aluminum foil and place it on top of the curry (‘floating’ on it). Heat a briquette of charcoal on an open flame till red hot and gently put the charcoal in to the aluminum foil bowl. Cover the dish immediately. Remove the cover just before serving, discard the foil bowl and charcoal and serve. The curry will be infused with a smokey flavor!

Hyundai i30

Hyundai i30
You could be forgiven for not having the Hyundai i30 on your shortlist for a second-hand family hatchback. After all, it’s a dull-looking car that you’ve probably never heard of. Before you dismiss it, though, you may be interested to know that in a recent customer satisfaction survey of 23,000 drivers, i30 owners emerged as the happiest on the road — leaving Jaguar, VW, Mercedes and the rest trailing.

It seems the i30 does everything owners expect of a family hatchback, and more. As evidence, take the inclusion of an auxiliary socket and USB port for your MP3 player — standard on every model — or how about a five-year, unlimited-mileage warranty? Then there’s the car’s aggressive pricing, which makes the i30 typically cost £2,000 less than a comparable Renault Megane — even though the latter suffers much worse depreciation.

Hyundai has kept costs competitive by sharing the i30’s platform, engines and transmission with the Cee’d model from its sister company Kia, but the i30 does not scrimp on equipment. All models have air-conditioning, electric front windows, CD player, front, side and curtain airbags and traction control. Entry-level Comfort and mid-grade Style models are the most popular; the top-spec Premium has leather trim.

The i30 was launched with 1.4 and 1.6-litre petrol engines (of 108bhp and 124bhp) and 1.6 and 2-litre diesels of 113bhp and 138bhp. Not one is a duffer; the petrol engines are particularly free-revving, quiet and economical. Both diesels are smooth and surprisingly quiet, even when cold, and offer the bonus of 60mpg economy.

On the road the i30 is a revelation: not only is it nimble, but it rides pleasantly. The steering is well weighted, visibility is excellent and the gear change is easy. The diesels make particularly relaxed motorway cruisers. Overall, the i30 shames established rivals with its balance of comfort and surefootedness.

A clear fascia, comfortable seats, good rear legroom and a 340-litre boot complete the appeal. The i30 may not have been on your radar, but if you’re after a used hatchback it should be now.

NEED TO KNOW

Airbags All models have front, side and curtain airbags. Front passenger airbag can be deactivated to accommodate a child seat

Bumpers Body-coloured bumpers show up any damage; parking sensors are standard only on Premium models

Diesel economy 90bhp 1.6-litre eco-diesel introduced in 2009 produces just 119g/km of CO2

Engines Don’t need costly cambelt changes

Gearbox Automatic gearbox available on 1.6 petrol and diesel models

Safety A five-star score for adult occupancy and four stars for child safety in Euro NCAP crash testing

Wheels The larger 17in wheels of Premium models compromise ride quality. A space-saver spare is standard on all models.

RELIABITY AND SERVICING

Hyundai’s generous warranty is a hit, as buyers are keen on the idea of avoiding unexpected bills in their car’s fourth and fifth year. But you should check that a used car’s warranty is still valid, as it is dependent on the car having been serviced to the maker’s schedule, in this case every 12 months or 12,500 miles, whichever is sooner. A Hyundai dealer can check this if you give the registration number.

RESIDUALS

Reliability, generous equipment levels and the five-year warranty make the i30 highly sought after, and consequently there are few used bargains. But its enduring popularity means you will get a good price when you come to sell it on, especially if it has any of its warranty remaining.

VITAL STATISTICS

Model Hyundai i30 1.6 CRDi; Comfort Engine 1582cc, four-cylinder diesel; Power 113bhp; Transmission Five-speed manual; Acceleration 0-62mph: 11.5sec; Top Speed 117mph; Fuel 62.8mpg (combined) CO2 125g/km; tax BAND D (£90 a year) Cost new now £14,300

THE ONE TO BUY

2008 08-registered Hyundai i30 1.6 CRDi Comfort with 10,000 miles and full service history. Pay £10,350 at a Hyundai dealer or £9,500 privately

OR FOR SIMILAR MONEY

2009 09 Mazda3 1.6D Takara; 2008 58 Ford Focus 1.6 TDCi Style; 2008 58 Vauxhall Astra 1.9 CDTi Design; 2008 57 Toyota Auris 1.4D-4D T3; 2006 56 VW Golf 1.9 TDI Match

Thisara Perera produced a devastating spell of seam bowling to record his maiden five-wicket haul and play a big role in Sri Lanka’s comprehensive victory.

The 21-year-old Perera (5/28) ripped through the Indian middle order with a fine exhibition of swing bowling to skittle out the visitors for a paltry 103 in just 33.4 overs, their third lowest total against the Sri Lankans, in what turned out to be a totally lop-sided contest.

The fired-up Sri Lankans rattled up the required runs of 104 in just 15.1 overs to gain a bonus point and become the first team to move into the final.

Tillakaratne Dilshan (35) and Mahela Jayawardene (33) virtually toyed with the Indian bowlers as they plundered runs at will to set up the chase brilliantly.

Paceman Ishant Sharma dismissed both the openers Dilshan and Jayawardene in two consecutive deliveries but it came too late in the day as the islanders overhauled the target with 209 balls to spare.

Till now, India’s biggest defeat in terms of balls remaining was 174 against Australia at Sydney in 1981. In that match, India had scored 63 and Australia responded with 64 for one.

It was an abject surrender by the lacklustre Indians who were outplayed in all departments of the game.

The hosts completed their league engagements with 11 points and India will have to now win their last match against New Zealand on Wednesday to secure a berth in the final. New Zealand have seven points and India five points.

Pacemen Lasith Malinga (2/21) and Nuwan Kulasekara (2/31) also chipped in with wickets to compound India’s misery on a day when nothing seemed to go right for Mahendra Singh Dhoni’s men.

Only Yuvraj Singh provided a semblance of resistance with a gritty 38 as the the Indian batsmen succumbed tamely on what appeared to be a spongy two-paced track at the Rangiri Dambulla International stadium.

Yuvraj was a victim of a dubious leg before decision and there were a couple of dodgy decisions during the Indian innings but that was no excuse for the pathetic display.

After the furore of the no-ball incident in the past few days, the Sri Lankans seemed all charged up for the must-win game and Dhoni’s decision to bat first after winning the toss completely backfired.

The Indians never really recovered from a poor start as wickets kept tumbling at regular intervals with the hosts exploiting the overcast conditions well.

Paceman Kulasekara struck the first blow by getting rid of dangerman Virender Sehwag, who was stranded on 99 in the last match after Suraj Randiv deliberately bowled a no- ball to spark off a major controversy.

Sehwag was trapped leg before wicket to Kulasekara’s sharp inswinger and umpire Kumar Dharmasena had no hesitation in giving him out. The Indian opener was not too happy with the decision as he walked back to the pavillion.

Dinesh Karthik, who has struggled to find form right through the series, was the next man to be dismissed with Kulasekara doing the damage again.

Karthik edged the ball to captain and wicketkeeper Kumar Sangakkara who was standing close to the stumps to prevent the batsman from walking down and negating the swing.

With India struggling at 26 for two, Rohit Sharma and Yuvraj Singh tried to steady the innings by playing cautiously against the Sri Lankan speedsters who bowled a disciplined line and length.

Rohit Sharma, who has also been struggling to find form, could not hang around for long, as Angelo Mathews plotted his dismissal with a gem of an inswinger which trapped the batsman plumb in front of the wicket.

Soon Suresh Raina joined him in the pavilion as he fell prey to Perera and the Indians were in the doldrums at a precarious 61 for four in the 18th over.

Perera struck again a few overs later by removing Dhoni who edged the ball to Sangakkara behind the stumps. The ball held its line enough to get the edge and Sangakkara made no mistake.

Perera then removed Ravindra Jadeja for a nine-ball duck and dismissed Praveen Kumar in the very first ball with Tharanga latching on to a simple catch at mid-off.

Yuvraj, who returned to the team after being laid low by a mild dengue, was the only batsmen who seemed comfortable in the middle as wickets kept falling at the other end.

Running out of partners, the stylish left hander picked up Perera for special treatment clobbering him for a boundary and a six to take India close to the hundred-run mark.

NEW YORK: India ranks 78th on the World’s Best Countries‘ list compiled by Newsweek magazine, which placed nations on the basis of health, education, economy and politics.

Among India’s neighbours, China is ranked 59th, Sri Lanka is placed at 66th position, while Bangladesh and Pakistan has been placed at 88th and 89th spots respectively.

Japan, South Korea and Singapore are the only three Asian countries in the top 20.

The top four positions go to Finland, Switzerland, Sweden and Australia while the United States comes in at 11th with Germany at 12th and the United Kingdom at 14th.

“In Newsweek’s first-ever Best Countries special issue, we set out to answer a question that is at once simple and incredibly complex–if you were born today, which country would provide you the very best opportunity to live a healthy, safe, reasonably prosperous and upwardly mobile life?,” writes Rana Foorohar, deputy editor.

The rankings are based on performance in areas such as education, health, economic dynamism and quality of life.

India is described as a big country with 1.2 billion people with a small per capita income of USD 1,170 per capita.

In an article describing how the countries were ranked, Foorohar writes, “While remarkable individuals can be found in any nation on earth, certain countries give their citizens much greater opportunity to succeed than others at certain points in time.”

“As wealth and power shift from West to East, and a new post-crisis world order continues to take shape, it’s no longer clear that being born and raised in Omaha offers quite the edge that it once might have,” she added.

India gets 2.5 for freedom of expression, political participation and electoral processes from Freedom House with 1 being the highest score. Pakistan scores low with 4.5.

In the quality of life section, the study quotes the World Bank statistics as 75 per cent of the population living on less than USD 2 per day.

In the ‘ease of doing’ business category, India gets 133th rank, according to World Bank, which puts 1 as the best place to do business.

China recorded more than 26,000 geological disasters in the first seven months of this year, nearly 10 times the number in the same period last year, Minister of Land and Resources Xu Shaoshi said.

There were only 10,500 geological disasters in China in 2009. This year several counties were hit by mudslides engulfing several multi-storey buildings virtually burying the inmates alive.

In the massive mudslides in Zhouqu County, northwest China’s Gansu Province this month 1,434 were killed and 331 were still missing.

Twenty three people were killed in Puladi Township in Gongshan in southwest China’s Yunnan Province, two days ago.

Sixty nine others are still missing. Over 2000 people were killed and several hundreds missing in relentless floods this year so far.

Xu attributed the disasters to frequent extreme weather conditions such as severe drought and rainstorms, as well as to the impact of seismic activities and ruled out big dams like Three Gorges, which is the world’s biggest dam of its kind responsible.

It was a misconception to blame the mudslides ravaging northwest China on hydropower plants the country has built along major rivers.

“The earthquake jolted many mountains which loosened the earth, the strong rain softened the slopes and landslides happen,” Xu said.

He denied that the hydropower plants on Chinese rivers were to be blamed for the frequent mudslides, saying their construction and the disasters were only a coincidence.

“The recent mudslides were absolutely not related to the hydropower stations,” he was quoted as saying in the official media here.

China has about 20,000 potential mudslide slopes, most of them in the west, Xu said.

His comments came as dams were increasingly being blamed for floods, landslides and earthquakes due to large scale diversion of river waters.

Besides this year’s floods and mudslides, China experienced two major earthquakes during the last two years.

The earthquake in Sichuan province bordering Tibet in 2008 in which about 68,000 people killed.

This year yet another earthquake struck the neighbouring Qinghai where about 2700 people were killed.

Geological disasters such as landslides and mudslides cannot be adequately predicted by current scientific means, Zhang Zuochen, a geologist with China University of Geosciences said.

“We can only predict that a gully is vulnerable to a mudslide and that the disaster will occur under specific circumstances. But we cannot predict when it will occur,” Zhang said.

No. 2 on the list was the Triple Baconator Value Meal from Wendy’s-the sandwich, which has three hamburger patties, three slices of cheese and nine strips of bacon, packs a 1,850-calorie punch when paired with a small Coke and fries. “As long as you don’t overindulge, you’re good,” said an optimistic Carlos Suarez of Long Island, who bought the fat-packed Tuna Melt at a Quiznos on Chambers Street.

The good news, the study suggests, is that you don’t have to stop eating fast food altogether- you just have to make smarter choices. “Once people have an understanding of the caloric calamities out there, they can make better choices and still have burgers. If people make changes like this three times a week when they order fast food, they can lose four pounds,” said Zinczenko.
